The Regional Cooking of India is more than a recipe collection, it’s a resource to introduce you to one of the world’s richest cuisines at home. With over 130 regional recipes and 20 key lessons, this book is built to help you move beyond following instructions and start cooking with confidence.
The recipes come from nearly every corner of India, drawn from my State Series where I cooked through dishes from across the country. From Tamil Nadu to Punjab, Gujarat to Uttarakhand, you’ll discover that Indian food is far more than just 'curries', naan, and biryani. Each state has its own specialties, techniques, and flavour combinations, and this book organises them so you can appreciate the variety and learn the differences for yourself.
But learning Indian food isn’t just about collecting recipes. That’s why I’ve included 20 fundamentals, lessons that taught me how to temper spices properly, balance sourness, choose the right rice or flour, and build flavour step by step. Think of them as the key things to focus on when starting out. These lessons are the building blocks that make the difference between guessing your way through a dish and truly understanding how Indian cooking works.
This isn’t a book of reinventions or “fusion twists.” The recipes here are traditional and time-tested, gathered through years of cooking, research, and conversations with friends and mentors. I don’t claim to have invented them, my aim is to pass them on in a way that’s practical, clear, and accessible for home cooks everywhere.
Whether you’re brand new to Indian food or looking to deepen your skills, this book gives you the tools, structure, and inspiration to cook with confidence and joy.

Really good
This book is Diwali spirit wrapped in love!
20 key lessons (some of which surprised me!) 223 pages of detailed recipes with explanations about ingredients, cookware, cooking process, chutneys.
Having followed Jake's page plantfuture for a couple of years, I was really hoping he would do a cookbook.
His love for Indian cuisine is outshined only by his respect of it. The way he has curated each recipe from multiple states, yet retaining its regional soul, packed with a flavourful punch, speaks of integrity in researching each dish.
I have to confess, living with foodies at home and being a food lover myself, Jake's recipes have ensured my table now regularly sees many more flavour packed meals from all over India. This book is absolutely worth it at full price and a steal at the Diwali sale.
If you want to make your desi palate happier than it already is, this book is a no-brainer. Go for it!
Incredible book. Made me fall in love with Indian food again. Al the recipes are simple and well written, easy to understand for even a beginner. I am Indian and I can say that one of the best parts of all the recipes and the book is that it’s all authentic, it’s not westernised. It is truly all homestyle and traditional. I also really appreciate all the notes and tips and tricks that have been added. This book is 100000000% value for money, don’t think about it, just buy it and thank me later.
Fantastic selection of regional recipes, can't wait to try them out.
